I find Sidecar most useful for sending individual applications to the iPad, instead of the whole screen. Sidecar does have some flexibility, since you can use it as a second monitor, have it mirror your monitor, or just send specific windows to it, but be aware that Sidecar will change your display resolution to match the iPad's resolution when you connect, so if you normally run something like a 4k Retina screen, be prepared for everything to move/resize when you connect the iPad (everything goes back to normal after you disconnect). Sidecar probably works best for productivity stuff if you have the Magic Keyboard and an iPad Pro/Air, since that basically turns the iPad into a laptop.
